Originating from Nagasaki, Japan, Castella is a traditional Japanese-style sponge cake with a long history. The original recipe consisted of only three ingredients—flour, eggs, and sugar. During the Edo period, honey was introduced as a substitute for the costly sugar, giving the cake its signature aroma and delicate sweetness. Over time, the recipe has evolved to create the unique flavor enjoyed today.
For our version, we use locally sourced honey from farmers in the Lockyer Valley, Queensland, ensuring both freshness and quality.
